Health recipes for your familyI AM THE QUEEN OF HIDING VEGETABLES IN MY HUBBY’S FOOD USING THESE HEALTHY RECIPES THAT ARE ALSO GLUTEN FREE!

The other day I chuckled when my husband said he “hates” kale. He had actually eaten it three times last week and did not even know it.  I have a lovely little secret: My beloved Vitamix blender processes vegetables in such a way that I can easily blend vegetables into all kinds of common meals with virtually no detection. Usually the only sign is the vitamin rich green color which my family has accepted because the food is so delicious!  With that in mind, here’s a few of my coveted, healthy recipes that are also gluten free.  Trust me, your family won’t be able to taste the difference.  If anything, they will love the food a little more:

OATMEAL ( OUR BABY’S FAVORITE BREAKFAST AND USUALLY PART OF MY PRE-WORKOUT MEAL)

Ingredients:

  • 1 cup Organic Gluten Free Steel Cut Oats
  • 2 cups of water
  • Large handful of Spinach
  • Vanilla Liquid Stevia
  • A dash of Coconut Sugar ( if desired)
  • Organic Raisins ( if desired)
  • Coconut or Almond Milk ( if desired)

Directions:

Blend Water and spinach in Vitamix until fully liquefied. Bring this green water and the oats to a boil. Simmer for 5-7 minutes. Let cook for one minute and add the remaining ingredients. If green oats freak you out just add some red berries to the blender and toss a few more on top of the cooling oatmeal to further the veggie disguise.

PIZZA

Our 2 year old one is used to seeing a multicolored pizza. She loves helping as we add thick colorful red, green and yellow peppers on top of our home made meal but I love my sneaky pizza trick because it more than doubles the nutrient content! Here is a simple weeknight Pizza that is ready in moments!

Split Gluten -free English muffins in half. Toast them and add coconut butter for increased nutrients. Place onto a baking sheet. Combine Peppers, basil and pizza sauce into Vitamix (the love of my life) or other high speed blender. Blend on high until the vegetables are fully blended and liquefied.  Coat each muffin with a tablespoon of this pureed veggie rich pizza sauce. Top with a thin layer of raw goat cheese. If your family likes a colorful pizza as well, you can add finely chopped Green and Red Bell Peppers, shredded basil and diced organic chicken sausage. Place in the oven at 350 degrees or until the cheese has melted. I prefer to take it out before it begins to brown and bubble.

Smoothies are also another great way to pack in the nutrients. This is one of our favorite summertime treats!

Its not as hard as you think to pull off healthy recipes every day. Sometimes a Body Spartan mama just has to be a little tricky.  Like I said earlier, the Vitamix is an essential part of my kitchen meal preparation article. It’s a little bit of an investment to start but will save you an incredible amount of time preparing these healthy recipes for your family.
